Small lamb-and-onion dumplings with sour cream and fresh coriander.
About Chuchvara
Malika Sharipova’s chuchvara are Uzbek meat dumplings in plain-flour and egg wrappers. This selected version uses minced lamb and the author’s usual presentation in the dumplings’ own cooking broth.
Onions, butter and lamb tail fat enrich the filling, with salt and pepper as the seasonings. Sour cream and fresh coriander accompany the soup version.
The small folded wrappers enclose the meat filling and sit within a light broth. The pinched corners give each dumpling its characteristic compact shape.
