About Dal bhat
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Dal bhat is presented in the Nepal Tourism Board’s cookbook as a set of Nepali staples rather than a single pot. This selected set follows its complete rice, lentil and cauliflower-potato tarkari recipes.
The rice is rinsed, drained and soaked in fresh water before boiling and covered simmering. The cookbook explicitly serves this rice component hot on a warm plate.
The lentils are pressure-cooked with their separate water, salt and turmeric. After the cooker cools, the lentils are lightly worked with a spoon; ghee-tempered asafoetida, cumin seeds and supplied chopped garlic finish the same dal.
For the tarkari, fenugreek seeds are tempered in the listed oil. Turmeric and cubed potato follow, then chopped cauliflower and salt are cooked under a lid before cumin, coriander and red chilli powders are added.
Chopped tomato is cooked into the vegetables, followed later by green garlic and black pepper. The book notes that rice, lentil and vegetable choices vary with season, location and family preference; this profile retains the three printed preparations.
