About Dikgobe
The Ramotswa community study records several traditional dikgobe combinations. This version selects lechotlho with black-eyed cowpeas: whole maize that has first been cooked on its cob with the sheaths, then dried for later use.
The maize and cowpeas supply the grain-and-pulse character of the dish. Salt and edible oil remain optional additions for taste, as the community account specifies, without a separate spice mixture.
The prepared maize is soaked and cooked before the pre-soaked cowpeas join it. Cooking continues until tender, leaving the grains and legumes together. This named Ramotswa version uses neither cracked samp nor the other offered beans.
