About Dimlama

Lilia Nikolenko presents dimlama as a distinctive dish of Andizhan in Uzbekistan. Her version layers fatty mutton, onions, potatoes, carrots, peppers and cabbage in a cauldron.

Cumin and coriander season the mixture, with parsley and celery sprigs contributing aromatics. Jambul and several additional fruits or vegetables remain optional; chopped dill finishes the dish.

The onions melt into an aromatic broth as the vegetables release their juices. For special occasions, meat and vegetables share a large lagan while broth is served separately; household servings combine them in individual bowls.
