Insontjwana

Also known as: Jugo beans and maize meal

A one-pot mixture of mashed jugo beans and maize meal.

About Insontjwana

Insontjwana is the jugo-bean and maize-meal dish recorded in IITA’s collection of commonly consumed foods in Eswatini. Its recipe comes from the project’s documentation and kitchen testing of everyday household preparations.

Jugo beans, also identified as Bambara groundnuts by Eswatini’s agriculture factsheet, provide the bean component. Maize meal gives the mixture its starchy body, with salt as the separately named seasoning.

The beans are mashed into the maize mixture rather than kept whole. The resulting one-pot preparation thickens as it cooks; the source records a crust forming before serving without specifying a final serving temperature.
