Jarma

A tangy, salty Kyrgyz wheat drink with sheep fat and an old-jarma starter, optionally accompanied by kurut.

About Jarma

Jarma is a Kyrgyz grain drink with a tangy, salty flavour and a substantial wheat body. Luke Willson’s host mother’s fermented wheat rendition was part of her family’s everyday meals.

Crushed wheat gives the drink its grainy character, while sheep fat contributes richness. An old batch of jarma supplies the starter in this version, with flour and salt also part of the mixture.

The drink can accompany the day’s meals or form a simple refreshment on its own. Kurut, a prepared milk-based yoghurt product, is a suggested accompaniment.
