Jenkun
Also known as: Jenkun from breadfruit
Marshallese ripe-breadfruit preserve baked in leaf parcels and dried in the sun.
About Jenkun
Jenkun is a Marshallese breadfruit preserve. The Marshall Islands Organic Farmers Association describes a version made from ripe mejwaan breadfruit, baked in banana-leaf parcels in a ground oven and then dried in the sun.
The ripe fruit supplies the flavour of the preserve. Grated coconut is an optional accompaniment when jenkun is eaten as a snack.
The finished preserve is dry and dark brown, with the breadfruit forming a layer. Grated coconut adds a loose, fibrous contrast when served alongside.
