Kaeng Het
Also known as: ແກງເຫັດ
A mushroom soup with pumpkin, aromatic herbs and fermented fish seasoning.
About Kaeng Het
Apple’s Lao-style gang hed belongs to the shared food culture of northeastern Thailand and neighbouring Laos. This rendition combines mixed mushrooms and pumpkin in a broth scented with lemongrass, shallot and chilli.
Fermented fish sauce gives the soup a savoury seasoning, alongside chicken stock and a little sugar. Cha-om and Thai basil add leafy herbal notes, while sticky-rice powder brings body to the liquid.
The mushrooms remain a mixed selection, with their individual shapes visible among the pumpkin and greens. The soup is presented in bowls with a separate serving of steamed rice.
