Lambi Souse
Conch souse with lime, chadon beni, cucumber, onion and Scotch bonnet.
About Lambi Souse
Lambie souse is a Caribbean conch preparation with a bright citrus and herb dressing. Felix’s Trinidad-style version combines pieces of conch with cucumber and onion in a clear, generously seasoned liquid.
Lime juice supplies the tartness, while garlic and chadon beni give a strong savoury, herbal character. Scotch bonnet adds heat, and the conch contributes a distinctive taste of the sea.
Tender but substantial conch contrasts with the fresh cucumber and thinly sliced onion. The souse is served at room temperature, often in a cup during relaxed gatherings with friends.
