Mchemsho
Boiled chicken with tomato, potato and capsicum, accompanied by a separate dairy preparation.
About Mchemsho
Mark Olive’s mchemsho wa kuku comes from The Good Cooks’ Tanzanian field cooking. This chicken version combines potatoes, carrots, tomatoes and green and yellow capsicum in a boiled preparation flavoured with garlic, ginger and lime.
The source also lists spring onions and baby spinach among the selected vegetable options. Milk and natural yoghurt form a separate accompaniment, retaining the dairy component of this particular published recipe.
Chicken pieces and vegetables make the main stew, with the reduced dairy preparation served in its own dish. The associated field cookbook places Olive’s cooking in central Tanzania, where he travelled to learn traditional recipes.
