Mochahlama oa mabele

Also known as: Basotho sorghum and wheat composite bread

Mochahlama oa mabele is a fermented Basotho composite bread made with sorghum meal and wheat flour.

About Mochahlama oa mabele

Mochahlama oa mabele is a fermented Basotho composite bread made with sorghum meal and wheat flour. This version follows the original Mafeteng household formula recorded by Pulane Nkhabutlane’s field research in Lesotho.

Scalded sorghum meal joins wheat flour, prepared sourdough, salt and water. Fermentation gives the bread its characteristic sourness, balanced by the grain’s sweetness.

Rounded portions are steamed, producing a dense brown bread with darker specks and a porous crumb. The participating bread makers describe cracks on its upper surface as a characteristic feature.
