Mochahlama oa poone

Also known as: Basotho maize and wheat composite bread

Mochahlama oa poone is a fermented Basotho bread combining maize meal and wheat flour.

About Mochahlama oa poone

Mochahlama oa poone is a fermented Basotho bread combining maize meal and wheat flour. This rendition follows the original Leribe regional formula documented in Pulane Nkhabutlane’s Lesotho field research, including its prepared sourdough and sugar.

The maize meal is scalded before joining the wheat dough. Fermentation brings the sour character that the participating bread makers associate with this family of composite breads.

Rounded portions are steamed into substantial breads with a dense, porous crumb and cracks across the top. The maize-and-wheat version is described as whitish brown, with visible wheat fibres.
