Peanut soup
A smooth Ghanaian peanut soup with chicken, tomato, ginger and basil.
About Peanut soup
Edinam’s chicken groundnut soup is a Ghanaian rendition of the soup also called nkatenkwan or azi detsi. Groundnut paste gives the broth its nutty flavour and smooth, substantial body.
Chicken, onion, tomato and ginger provide the savoury base. Scotch bonnet brings heat, while the basil known locally as akuko mesa or akuko besa contributes an aromatic note.
The soup is presented hot, with chicken pieces in the groundnut broth. Fufu is one suggested accompaniment, supplying a starchy partner to the rich, slightly spicy soup.
