Pickled Herring
Also known as: Inlagd sill
Herring fillets in a sweet-sour spiced vinegar pickle with lemon and red onion.
About Pickled Herring
Hank Shaw’s Swedish glasmastarsill is also known as glassblower’s herring. Silvery herring fillets, lemon slices and red onion give the pickle its distinctive appearance.
Vinegar supplies the sourness and sugar softens its edge. Mustard seed, allspice, black peppercorns, bay and cloves provide a warm spice mixture around the rich fish.
The fillets are arranged with their skin facing outward in glass jars. Shaw presents the pickle as a snack, with pumpernickel, potatoes and hard-boiled eggs among his suggested accompaniments.
