Saboko
Mullet and aromatic leaves baked in sago-palm parcels over coals.
About Saboko
Saboko is a Timorese fish preparation baked inside palm leaves. Agustinha Duarte’s Viqueque family version uses mullet with herbs and seasonings; in Uatucarbau it is also called dotuwai hamudara.
Green chillies give the fish a spicy character, with ginger, garlic and red onion adding aromatic depth. Lemon juice sharpens the mixture alongside basil and local kata leaves.
The fish is enclosed in sago-palm fronds that char over the coals. Inside, the seasoned fish stays moist, with rice presented alongside the opened parcels.
