Sadza
Firm Zimbabwean maize-meal porridge, with a mince-and-greens relish offered alongside.
About Sadza
Rumbie’s plain sadza is the Zimbabwean maize porridge she learned to make as a child. Her account places it at the centre of everyday meals, alongside meat and leafy vegetables.
This rendition uses refined maize meal and water. Its mild maize flavour accompanies savoury relishes, while the thick, smooth texture gives the porridge a substantial presence on the plate.
Sadza appears as a compact mound with a preferred relish. Rumbie offers Aurther’s mince neMuriwo, a mixture of minced steak, greens, tomato and onion, as one accompaniment.
