Šakotis
Lithuanian egg-rich tree cake built in branching layers on a rotating spit.
About Šakotis
Šakotis, meaning “branched tree”, is a Lithuanian celebration cake traditionally baked on a rotating spit. This profile follows the established butter, egg, flour, sugar and cream formula served plain.
Eggs and butter give the cake a rich, gently sweet flavour, while cream softens the crumb. Repeated exposure to the fire creates toasted, caramelised notes along each thin layer.
The finished cake is tall and conical, with irregular golden-brown spikes resembling branches and visible rings when sliced. Its interior is firm and layered, becoming crisper as the proportion of egg increases.

Origins & food traditions
The Šakotis reference identifies it as Lithuania’s traditional tree-shaped spit cake and documents the butter, whole egg, flour, sugar and cream batter poured in layers over a rotating spit. A Lithuanian midsummer account independently corroborates the same core ingredients, tree form and spit-baked method.
