About Schnitz und Drunder
Schnitz und Drunder brings together potatoes, dried fruit and smoked meat in a substantial stew. Andie Pilot's classic Swiss version uses dried apple slices and smoked pork belly, drawing on Betty Bossi's Schwiizer Chuchi.
Caramelised sugar adds sweetness around the apples, balanced by the savoury stock and smoked pork. Salt and pepper complete the simple seasoning.
Softened fruit surrounds tender potato cubes and pieces of meat. The potatoes sit within the cooking liquid, giving the dish a moist, closely combined texture.
