About Shepherd's pie

Jamie Oliver’s Super shepherd’s pie combines minced lamb, cannellini beans and chopped vegetables beneath a swede-and-potato mash. The selected recipe comes from his Super Food Family Classics cookbook.
The lamb is browned with black pepper before rosemary and drained beans are stirred in. Chopped onion, carrot, celery and chestnut mushrooms then soften in the pan, followed by flour and either chicken or vegetable stock.
Swede cooks first in salted boiling water, with potato added later. The drained vegetables are mashed with semi-skimmed milk and mature Cheddar to make the topping.
Worcestershire and mint sauces season the simmered mince mixture. Peas are scattered across its surface before spoonfuls of mash are added, making a layer between filling and topping.
A fork scuffs the mash into peaks and valleys, increasing the crisp edges. The pie bakes until golden and bubbling, and Oliver suggests seasonal greens alongside it.
