About Spaghetti Haitien

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

This selected spaghetti Haitien uses Mirlene’s beef-kielbasa variation. Spaghetti is mixed with sausage, onion, bell pepper, garlic, tomato paste, ready epis, parsley, thyme, salt and pepper, and served warm with bread.

The kielbasa, onion and bell pepper are sliced and set aside. Parsley and thyme are chopped, and garlic is minced and set aside. The supplied spaghetti cooks according to its package until al dente.

The sausage cooks in an oiled large pan, then transfers to a plate. In the same pan, bell pepper, half the sliced onion and garlic cook with constant stirring. Tomato paste is stirred in with part of the retained pasta water, and the sausage is returned.

The heat is lowered. Spaghetti, ready epis, salt, pepper, chopped parsley, thyme and the remaining pasta water are mixed in. The pan is covered briefly while the contents cook together.

The spaghetti is served warm with ready bread. Ketchup is the selected optional addition at eating.
