Sultsina

Thin Karelian rye pastries enclosing rice porridge, finished with butter and water.

About Sultsina

Sultsinat are traditional Karelian pastries with thin rye-based shells and porridge filling. Emilia Kolari's rendition combines rye and wheat flours with a rice-and-milk centre.

Butter enriches the salted rice porridge and gives the shells their finish. The soft, creamy filling contrasts with the thin, griddle-cooked outer layer.

The pastries are folded into layered portions around the porridge and stacked on a platter. Their simple rye, rice and dairy character defines this rice-filled Karelian version.
