Taro with Coconut Cream

Grated taro baked in a banana-leaf parcel and mashed with coconut cream.

About Taro with Coconut Cream

Tumu Toma's suasua taro is a Nui preparation from Tuvalu. Grated taro is baked in a green banana-leaf parcel, then unwrapped and combined with coconut cream.

Coconut cream gives the taro a rich, mellow flavour. The recipe also offers local coconut toddy syrup as an optional sweetener.

The cooked taro is mashed into a thick pulp and thoroughly combined with the cream. The leaf encloses the taro during baking and is removed before the final mixture is presented.
