Tukir
Whole small mackerel with herbs and chillies, baked in banana-lined bamboo.
About Tukir
Tukir is a Timorese tradition of cooking food in bamboo over a fire. This ikan tukir from Adarai, Viqueque, is demonstrated by Januario and community cooks, using whole small mackerel with herbs and seasonings.
Ginger, hot chillies, garlic and red shallots give the fish aromatic depth. Basil, local kata leaves and sea purslane bring green flavours, while peppercorns and salt complete the seasoning.
Banana leaves line the bamboo around the fish. The opened sections reveal whole fish surrounded by the herb mixture; bamboo-cooked black rice is a suggested accompaniment.
