Tuluk

Cassava parcels filled with coconut-seasoned pork and enclosed in banana leaves.

About Tuluk

Tuluk is a Vanuatu cassava parcel with a savoury meat filling. Vanuatu-born author Miss Tiny presents this familiar village-fair food with ground pork, green onion, garlic and coconut milk inside banana leaves.

The pork filling brings savoury richness, balanced by the mild cassava exterior. Coconut milk adds fullness around the onion and garlic, with salt and pepper providing the simple seasoning.

Firm grated-cassava layers surround the moist filling in a compact parcel. The banana leaf encloses the tuluk for cooking and is peeled back gradually as the parcel is eaten by hand.
