Warak Enab

Also known as: Stuffed grape leaves, Warak al-Ainab, ورق عنب

Warak enab are tender grape-leaf rolls with a savoury rice-and-meat filling.

About Warak Enab

Warak enab are tender grape-leaf rolls with a savoury rice-and-meat filling. Kathryn Pauline’s Lebanese lamb rendition pairs the slender rolls with bone-in lamb chops and a lemony cooking liquid.

Extra virgin olive oil gives the filling and surrounding broth richness. Lamb, grape leaves and lemon provide the central flavours, with Lebanese baharat adding a restrained aromatic seasoning.

The tightly wrapped rolls have glossy outer leaves and a soft rice filling. They form a layered serving with the lamb chops, bringing small, neatly shaped parcels together with larger pieces of meat.
