Yuzu
Aromatic East Asian citrus used mainly for its peel and juice.

About Yuzu
Yuzu is an aromatic East Asian citrus fruit valued chiefly for its fragrant peel and tart juice. It seasons savoury dishes, sauces, dressings, desserts, preserves, and drinks, often where a sharper, more floral citrus note is wanted than lemon or lime provides.
The peel has a vivid citrus fragrance, while the juice is tart and lightly bitter, with relatively little pulp compared with common eating oranges. The fruit is not usually eaten out of hand because it contains many seeds and has a strongly flavoured rind.
Fresh yuzu is generally round, yellow to yellow-green, and often slightly knobbly. Its peel may be finely grated as zest, cut into strips, or steeped; the juice is pressed and strained as needed. It is also encountered as juice, preserved peel, marmalade, or other prepared flavourings.

Per 100 g edible portion. Values use MEXT 2023 with March 2026 corrections; the English food name is matched by food code from the official English edition. Portions & preparation
Specify whether the reference uses whole yuzu, juice, peel, zest, pulp, dried peel, frozen fruit, or bottled concentrate. Match the edible portion and preparation, since this aromatic citrus is often used in small amounts. Added sugar, salt, alcohol, oil, or sauce ingredients should be recorded separately.
Compare the right form: Match a reference to yuzu juice, peel, zest, pulp, whole fruit, dried form, or concentrate, with the same edible portion and preparation.
Diet considerations
Yuzu is a plant-derived citrus fruit. Compatibility changes when it appears in sweetened juice, syrup, alcoholic drinks, preserves, dressings, sauces, or coatings, including products with dairy, animal ingredients, or cereal carriers. Distinguish peel and juice; portion size and recipe determine the practical carbohydrate pattern.
