A FOOD TRADITION

Afro-Ecuadorian Cuisine

Afro-Ecuadorian cuisine includes foodways developed by Black communities in places such as Esmeraldas on the northern coast and the Chota Valley in the northern Andes. Coastal expressions emphasize coconut, seafood, green plantain, cassava, and aromatic herbs, while inland traditions incorporate maize, beans, grains, and locally raised meats. Encocado de pescado, tapao, and bala are representative coastal examples, though the Chota Valley has its own repertoire and should not be reduced to Esmeraldas cooking. Techniques include pounding plantain, cooking in coconut-based sauces, leaf wrapping, and slow simmering. The category reflects cultural history and community practice rather than a single geographic style.
