A FOOD TRADITION

Algerian Tuareg Cuisine

Algerian Tuareg cuisine is practiced by Saharan Tuareg communities, especially across the south, and shares ingredients and techniques with neighboring Saharan peoples without belonging exclusively to Algeria. Millet, wheat, dates, goat, sheep, camel products, dried meat, and tea are important in different settlements and seasons. Cooking emphasizes portability, open-fire baking, grinding grains, reconstituting dried foods, and preparing simple broths or porridges suited to arid environments. Examples include tagella, a sand- or ash-baked flatbread; grain dishes served with milk, dates, or sauce; and tea-centered offerings accompanied by dates or roasted foods. Urban and settled households show considerable variation.
