A FOOD TRADITION

Auvergnat Cuisine

Auvergnat cuisine is associated with the mountainous Massif Central, especially historic Auvergne, where pastoral farming, harsh winters and volcanic uplands shaped a hearty rural repertoire. Potatoes, cabbage, lentils, pork, beef, freshwater fish, chestnuts and firm cow’s-milk cheeses are common ingredients. Slow simmering, baking, charcuterie production and the preparation of thick soups or stuffed vegetables are characteristic methods. Examples include truffade, potée auvergnate and pounti, a savory herb and prune-studded terrine. The tradition overlaps with neighboring Limousin and Rouergat cooking, but its mountain pantry and cheese-centered dishes make it a recognizable regional cuisine.
