A FOOD TRADITION

Eastern Anatolian Cuisine

Eastern Anatolian cuisine belongs to a high-altitude region where long winters, pastoralism, grain farming, and historically diverse Armenian, Kurdish, Turkish, Azerbaijani, and other communities have shaped foodways. Lamb, beef, grains, legumes, yogurt, butter, dried fruits, nuts, and preserved vegetables are common, while grilling, baking, slow cooking, drying, and souring are important techniques. Representative preparations include ayran asi, cag kebabi, and kete. Regional breakfasts and winter stores of cheese, clarified butter, dried meat, and grains are also significant. This tradition overlaps with neighboring Caucasian, Iranian, and Mesopotamian cuisines without being reducible to any one of them.
