A FOOD TRADITION

Ecuadorian Amazonian Cuisine

Ecuadorian Amazonian cuisine is shaped by Kichwa and other Indigenous communities, riverine environments, and forest agriculture. Yuca, green plantain, freshwater fish, palm fruits, maize, chili peppers, and locally gathered ingredients are common, while cooking often uses leaf wrapping, wood-fire roasting, fermentation, and preparation of cassava into flour or beverages. Maito de pescado, in which fish is wrapped in leaves and roasted, is a widely recognized example; chontacuro preparations and uchumanga are also associated with Amazonian foodways. Practices vary among communities and river basins, so this category should not be treated as uniform or as an exclusive claim over traditions shared across Amazonia.
