A FOOD TRADITION

Gaucho Cuisine

Gaucho cuisine refers to the mobile pastoral cooking tradition historically associated with the Pampas and other cattle-raising areas of the Southern Cone. It emphasizes portable provisions, open-fire cooking and communal rural meals rather than elaborate kitchen equipment. Beef and other meats are roasted over wood or embers, while flour, maize, beans, onions and squash support breads, stews and filled pastries. Asado, locro and empanadas are representative examples, accompanied culturally by mate and rustic breads. The tradition overlaps with Criollo foodways in Uruguay, southern Brazil and other Argentine regions, and its modern form includes both rural practice and national historical symbolism.
