A FOOD TRADITION

Hue cuisine

Hue cuisine is a particularly recognizable tradition from the former imperial capital, shaped by courtly presentation, Buddhist vegetarian practice, local central Vietnamese foodways, and the city’s surrounding lagoon and coast. It frequently emphasizes small portions, finely prepared rice and tapioca items, aromatic broths, chili-based condiments, and carefully arranged garnishes. Steaming, simmering, grilling, and pounding are common techniques. Examples include bun bo Hue, banh beo, banh khoai, and com hen. Hue cuisine overlaps with central Vietnamese cuisine rather than standing wholly apart from it, but its historical and ceremonial character makes it a useful catalogue entry.
