A FOOD TRADITION

Hui cuisine

Hui cuisine refers to culinary traditions of Hui Muslim communities across China, with especially visible regional expressions in Ningxia, Gansu, Qinghai, Xinjiang, and parts of northern China. Lamb, beef, wheat, noodles, flatbreads, potatoes, carrots, onions, cumin, and aromatic spices are common, while pork and alcohol are excluded in accordance with Islamic practice. Boiling, braising, roasting, hand-pulled noodle making, and baking are central techniques. Representative foods include hand-pulled beef noodles, lamb kebabs, and beef or lamb roujiamo-style flatbread sandwiches. Hui cuisine varies substantially by region and shares many foods with neighboring Central Asian and northern Chinese traditions.
