A FOOD TRADITION

Malaysian Chinese Cuisine

Malaysian Chinese cuisine encompasses established foodways among Hokkien, Cantonese, Hakka, Teochew, Hainanese, Foochow and other Chinese communities, with local adaptation across Peninsular Malaysia, Sabah and Sarawak. Rice, noodles, seafood, pork, poultry, tofu, soy, fermented bean products and preserved vegetables are central. Characteristic methods include stir-frying, steaming, braising, roasting, soup-making and wok cooking, often with sambal, belacan or regional herbs. Representative dishes include Hainanese chicken rice, bak kut teh and char kway teow, although many preparations are shared with neighboring Southeast Asian Chinese communities and should not be treated as exclusively Malaysian.
