A FOOD TRADITION

Savoyard Cuisine

Savoyard cuisine developed in the Alpine region of Savoie and Haute-Savoie, shaped by mountain agriculture, cold winters and historic links across the western Alps. Potatoes, cabbage, onions, beans, cured pork, freshwater fish, buckwheat, cream and mountain cheeses form its core pantry. Hearth cooking, gratin preparation, soup making, curing and communal melted-cheese meals are characteristic techniques and formats. Familiar examples include tartiflette, diots au vin blanc and croziflette, while fondue and raclette represent broader Alpine traditions shared across national borders. The cuisine is therefore not exclusively French, but its French Alpine expression is sufficiently established to merit inclusion.
