A FOOD TRADITION
Waray Cuisine
Waray cuisine is associated with Samar, Leyte, and nearby Eastern Visayan communities, where maritime trade, coconut cultivation, root crops, and fishing shape the pantry. Coconut milk, seafood, pork, rice, cassava, taro, bananas, and souring fruits appear frequently, with garlic, ginger, and chili used as supporting aromatics. Common methods include grilling, simmering, smoking, fermenting, and cooking food in coconut milk or leaf wrappings. Examples include binagol, a sweetened taro preparation; moron, a chocolate-and-rice cake; and kinilaw-style seafood. Waray foodways also preserve practical methods for storing fish, tubers, and coconut products.
