About Aleppine Sujuk
Sujuk is a strongly seasoned beef sausage in Aleppo’s Armenian food tradition. Antonio Tahhan records his aunt’s homemade version, shaped in cloth rather than ordinary sausage casings.
Garlic, cumin, allspice and Aleppo pepper give the sausage a bold, warm flavour. Ground fenugreek is an optional addition that Tahhan distinguishes from the more usual local spice mixture.
