About Aloo Chop

Moumita Paul’s aloor chop follows the Kolkata and West Bengal street-food preparation of spiced potato patties beneath a besan batter. Her version includes a homemade bhaja masala and mustard oil in the filling, batter and frying.

Ginger, garlic, green chilli and tomato season the potato. Cumin, coriander, red chilli, turmeric and bay leaf contribute to the aromatic profile, with black salt at the finish.

The flat patties have a crisp golden coating around the potato filling. Plain puffed rice, a whole green chilli and tea form the selected published accompaniment.
