Basbousa

Also known as: بسبوسة

Egyptian semolina sweet soaked in syrup, with ghee and optional nuts.

About Basbousa

This basbousa follows Tasbih’s Egyptian pastry-shop style, developed from Chef Hagar Elhakeem’s recipe. Medium-grind durum semolina, ghee and milk form the base, with a heavy syrup in the batter and a lighter soaking syrup.

Ghee gives the sweet its buttery character, while sugar syrups provide sweetness and lemon a slight citrus note. Coconut, hazelnuts and fresh eshta are optional additions in this selected version.

The texture is soft and dense with a gently sandy crumb. A deeply golden surface has a thin, slightly crunchy layer above the syrup-moistened interior.
