Kesme

Kyrgyz kesme is a lamb and noodle soup with radish, jusai, onion and tomato purée.

About Kesme

Kyrgyz kesme combines hand-cut noodles with lamb, radish and aromatic vegetables in broth. This cookbook rendition includes jusai, onion and garlic, with tomato purée adding colour and a little sharpness to the meaty base.

Lamb tail fat gives the soup richness, while radish adds a contrasting vegetable flavour. The egg dough gives the noodles body, and the thin strands share the bowl with small pieces of lamb and vegetables.

The finished soup is presented in individual bowls. Its mixture of broth, noodles and meat makes a substantial dish, with the vegetables and aromatics distributed through each serving.
