Shopska Salad

Also known as: Шопска салата

Bulgarian tomato-cucumber salad with raw red pepper, onion, parsley and crumbled sirene.

About Shopska Salad

Mira Lyubenova’s shopska salad belongs to the Bulgarian family repertoire she grew up eating. Her rendition combines tomatoes, cucumber, raw red pepper and onion beneath a layer of white brined sirene.

The vegetables give the salad its juicy, crisp texture. Salt, olive oil and optional vinegar form a light dressing, while parsley and the salty cheese provide a fresh, savoury contrast.

Crumbled sirene covers the chopped vegetables, with olives offered as a garnish. Rakia and crusty bread are suggested accompaniments to the salad’s tomato-rich juices.
