About Sindhi Biryani

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Abida Baloch’s Sindhi biryani combines chicken qorma with rice, potatoes, plums and lemon slices. Fried onions appear in the layers and again at serving, with green coriander and mint finishing the dish.

Rice is boiled in water. Clarified butter is heated and the tomatoes are cooked in it, followed by the supplied boiled potatoes, salt, red chilli powder and some of the food colour.

Chicken, yogurt, ginger-garlic paste and the listed whole all spice are added and cooked. Coriander powder and turmeric follow, and cooking continues until the chicken is tender.

Half of the rice goes into a greased pan. Potatoes, green chillies, lemon slices, fried onions, plums and the same chicken qorma are added, followed by the remaining rice. More of the same food colour is added before the biryani simmers.

The finished biryani is served with green coriander, mint and fried onions. This is the chef’s selected version, with the chicken mixture and rice brought together in layers.
