Stewed Pork

Pork shoulder in a dark caramelised-sugar gravy with herbs, tomato and green seasoning.

About Stewed Pork

Stewed pork is a Trinidadian family Christmas favourite in Ria's kitchen. Her version combines pork shoulder with fresh aromatics and her own green seasoning, then surrounds the meat with a dark brown-sugar gravy.

Garlic, scallions, thyme and oregano give the pork a layered herbal flavour. Tomato and ketchup contribute sweetness and acidity, while optional hot pepper adds heat. Butter enriches the sauce.

Tender pieces of pork are coated in a thick, dark gravy. The dish is substantial, with the herbs and vegetables closely combined around the meat.
