Vorschmack is a Finnish meat-and-herring dish with a finely minced texture. Herkkusuun Lautasella’s traditional rendition combines cooked lamb and veal with salt herring, onion, rye bread, cream and cognac.

The mixture is rich and savoury, with the fish’s saltiness balanced by meat, cream and a little tomato paste. Rye bread gives it a fuller cereal flavour and substantial texture.

The warm vorschmack shares the plate with baked potatoes, sweet spiced beetroot, sour cucumber and smetana. These accompaniments bring contrasting mild, sweet and tangy flavours beside the dense meat mixture.
