A FOOD TRADITION

Kristang Cuisine

Kristang cuisine belongs to the Portuguese-Eurasian community historically centered in Melaka, with related communities elsewhere in Malaysia. It blends Portuguese-derived methods and dishes with Malay, Chinese and Southeast Asian ingredients, using seafood, pork, poultry, rice, coconut milk, chilies, tamarind, candlenut and local herbs. Slow braising, baking, stewing, pickling and spice-paste preparation are characteristic. Well-known examples include devil's curry, sugee cake and pongteh-style festive dishes, though terminology and recipes vary between households. The cuisine developed through centuries of contact and should be understood as a shared creole tradition rather than an untouched European survival.
