A FOOD TRADITION

Pashtun Cuisine

Pashtun cuisine is practiced across southern and eastern Afghanistan and adjoining Pashtun areas of Pakistan, with strong variation between settled communities, mountain valleys, and pastoral households. Wheat breads, rice, onions, pulses, yogurt, lamb, goat, and dried meat are central. Cooking commonly emphasizes grilling, slow simmering, tandoor or griddle baking, and the preservation of meat for seasonal use. Recognizable examples include chapli kebab, sajji, and landay, a dried-meat preparation; meat-and-rice dishes and hearty stews are also important. The tradition is shaped by hospitality, communal meals, and adaptation to dry highland and frontier environments rather than by a single standardized recipe set.
