A FOOD TRADITION

Siwan Cuisine

Siwan cuisine comes from the Berber-speaking oasis community of Siwa in Egypt’s Western Desert. Its foodways developed around date palms, olives, barley, wheat, vegetables, and locally raised poultry or lamb, with preservation especially important in an isolated oasis environment. Flatbreads and porridges are prepared from grains, dates appear in both everyday and ceremonial foods, and slow cooking is common for meat and vegetable dishes. Examples include tagella, a traditional Siwan bread; asida, a cooked grain preparation; and couscous served with vegetables, dates, or meat. Siwan cooking has clear North African affinities while retaining local techniques and ingredients.
