A FOOD TRADITION

Vietnamese Cham cuisine

Vietnamese Cham cuisine is associated chiefly with Cham Muslim and Hindu communities in south-central Vietnam, while sharing historical and contemporary connections with Cham communities elsewhere in mainland Southeast Asia. Rice, fish, seafood, poultry, beef, aromatic herbs, turmeric, chili, coconut, and fermented seasonings appear in varied combinations. Curries, grilled foods, rice preparations, soups, and festive dishes are shaped by Islamic dietary practice in some communities, though Cham foodways are not uniform across Vietnam. Examples include Cham-style curries, tung lamaow noodle soup, and rice dishes prepared for communal or religious occasions. The tradition deserves treatment as culturally specific rather than as a generic regional cuisine.
