Cinnamon
Cinnamon is an aromatic bark spice used in sweet foods, drinks, spice blends, and savory braises.

About Cinnamon
Cinnamon is the dried inner bark of cinnamon trees, prepared as rolled quills, broken pieces, or ground powder. It has a warm, sweet, woody fragrance with noticeable spice and sometimes citrus-like or resinous notes. Powder is fine and brown, while quills are layered, curled bark.
It is used in desserts, baked goods, hot drinks, spice blends, preserves, and mulled beverages, as well as savory braises, rice dishes, meat preparations, and sauces. Whole quills infuse flavour and may be removed before serving; ground cinnamon disperses through a dish.
Ground cinnamon can contribute slight dryness or grittiness. Quills retain their layered appearance during cooking, while powder becomes less visually distinct as it disperses through liquids, batters, sauces, or spice mixtures.
